Knee Socks (it's a derby thing - plus, the extra layer of warmth is so awesome in our drafty house)
Baked Oatmeal- I find myself making a big batch early in the week and eating off of it all week long. Here's a great recipe for it.
2 c oats
2 2/3 c milk
1 1/3 c water
1tsp cinnamon (we've discovered Stinky has an allergic reaction to cinnamon, so I sub allspice)
dash nutmeg
1 1/3 c(at least, more is awesome) fruit, raisins, etc your choice
1/2 c brown sugar, maple syrup or honey (less is usually fine)
pinch of salt
Preheat oven to 350. Spray a cooking dish. The recipe says to mix it all in a bowl- I just dump it all right into the baking dish- a deep 8x8 pan and stir it with a fork. Bake for 40 minutes, or until most of the liquid has evaporated.
I love mix 'em and leave 'em recipes, so this is right up my alley. Right now I have some with peaches cooking in my oven. The oatmeal made this way is so lovely and creamy.
